Free recipe book for aged care homes

Nestlé Professional has launched a free recipe book for aged care homes with more than 50 recipes that aims to help improve aged care residents’ nutrition.

Nestlé Professional has released an online recipe book to help aged care services improve the nutritional value of residents’ meals.

The free resource has been developed in collaboration with nutrition and culinary experts to ensure meals are both appetising and nutritionally appropriate for residents.

Nourished: Make Every Bite Count includes a daily menu planning checklist, sample menu planning guide and information about appropriate serving sizes.

There are also more than 50 recipes inside, each coming with a nutrition content analysis to provide higher energy or protein options.

They include creamy porridge with stewed fruits, Moroccan apricot chicken, pumpkin scones, creamy broccoli chowder and fig and honey mousse cake.

Nestlé Professional brand nutritionist Karen Kingham said the idea to create the recipe book came from customers asking for support to develop recipes for their residents.

“For most residents, the food provided by a care home is their only option for a meal. This means 100 per cent of their nutritional needs must be met through a nutritionally balanced menu that offers appealing, quality food that’s texture appropriate,” said Ms Kingham, an accredited practising dietitian.

Gregg Burdon, an aged care catering consultant and former executive chef at Aegis Aged Care Group, is among those who collaborated on the recipe book.

He said the resource aimed to provide a range of practical, nutrition-focused and tasty meal options for a residential aged care setting.

“We worked hard to ensure this resource was something an everyday cook in an aged care environment could pick up and work with straight away,” Mr Burdon said.

“These chefs aren’t cooking for 10 people; they’re cooking for 100 to 200 people. The aged care setting is also very time poor and probably the tightest working environment I’ve worked in as a chef. Getting the right nutrition and protein – and doing it all with the limited time and resources available – is very challenging.”
